Aosa soup is the simplest, combining seaweed and egg, paired with a clean chicken-based dashi for a light yet flavorful finish.
All three soups are made without chemical seasonings, relying on natural ingredients like miso, bonito, kelp, shiitake, and fermented seasonings for their umami depth.

Put the freeze-dried miso soup into a cup, add boiling water, and stir until fully dissolved. The dried vegetables will float to the surface and expand as they rehydrate.

This soup makes a delicious fast breakfast. I boil a little more water than it calls for in a small pot, add a few spoonfuls of soft tofu, some chopped mizuna or wonbok, and a raw egg. The dried packet is added after the egg is poached. Tasty and nutritious!
