Line the bottom of the pan with aluminum foil and add smoking chips. Do not heat while empty. Heat on a gas stove at medium or lower. Add food on top of the rack and place the lid on top and smoke until ready.
Care instructions: Before first use, gently simmer rice water or water with a little potato starch on low heat, then rinse and dry to prevent water absorption. Placing the pot on direct flame while still wet may cause cracking. Hand washing with a soft sponge and mild detergent.
