


Adachi Jozo is a soy product local to Taka town, Hyogo Prefecture in the Kansai region of Japan. They specialize in making high quality soy products like miso and shoyu, using only high quality and domestic ingredients.
This Natural Miso Paste, or "raw miso" is made of only the domestically-produced ingredients of organic soybeans, organic rice, and salt. The ingredients are combined and brewed together for 300 days to allow the natural umami flavors to come out slowly.
Rather than using chemicals or artificially speeding up the time of fermentation, Adachi strongly advocates for following the natural process for fermenting miso as close as possible.
Most Japanese miso is only aged for 2 or 3 months, but Adachi sticks to a natural brewing method that allows the miso to age for 10 months. This gives the miso paste a completely different and unique flavor that cannot be found in other miso pastes.
Use this miso paste to make the heartiest miso soup, or add it into sauces, dressings, or marinades.
